Materials:
- 2 to 4 ripe bananas, mashed
- ⅓ cup melted butter
- ¾ cup white sugar
- 1 large beaten egg
- 1 tsp. vanilla extract
- 1 Tbsp. coffee grounds
- 1 tsp. baking soda
- 1 tsp. salt
- 1 ½ cups white flour (can substitute with whole wheat)
- 1 cup chopped walnuts or pecans
Directions:
- Preheat oven, prepare muffin tins: preheat oven to 350 degrees. Line pan with paper liners or non-stick cooking spray
- Combine wet ingredients: mash the bananas in a large bowl. Stir in melted butter, and mix in egg, sugar, vanilla, and coffee grounds.
- Combine dry ingredients: whisk together the flour, salt and baking soda.
- Combine wet and dry ingredients: add together the banana and flour mixtures a third at a time. Do not over-mix, as over-mixing will result in dry tough muffins.
- Fill muffin tins and bake: fill the muffin tins about ⅔-¾ of the way full. Bake at 350 degrees for 20-25 minutes. Check for doneness by inserting a toothpick into the top of the muffin, if it comes out clean, it’s done.
- Cool: cool muffins on cooling rack for 10 minutes and enjoy.
