Pictured is a blueberry cobbler made by staffer Katie Quirke. This fresh and sweet treat is easy to make and pairs well with some vanilla ice cream!
Blueberry cobbler is a great spring dessert due to it being sweet, fresh and easy to make. This cobbler is sure to give a sweet end to a hard day.
Ingredients
¼ cup of butter (half a stick) melted
½ cup of sugar
1 cup of flour
2 teaspoons of baking powder
½ teaspoon of salt
1 teaspoon of ground cinnamon
½ cup of milk
2 cups frozen blueberries
2 teaspoons of flour
Instructions
Preheat the oven to 350 degrees fahrenheit.
Butter a round quiche pan or casserole dish with 1 tablespoon of softened butter, or spray the entire pan with nonstick cooking spray.
Melt ¼ cup of butter in a microwave safe bowl, for 20-30 seconds
In a large mixing bowl, combine ¼ cup of melted butter with ½ cup of sugar, 1 cup flour, 2 teaspoons baking powder, ½ teaspoon of salt, 1 teaspoon of ground cinnamon and ½ cup of milk. Whisk this mixture until a smooth batter appears.
Pour the smooth batter into the buttered pan.
In a medium bowl place 2 cups of frozen blueberries, then sprinkle 2 teaspoons of flour onto the blueberries. Now mix or shake the bowl to evenly spread the flour.
Pour the floured blueberries on top of the batter and for a little extra sweetness sprinkle the dish with sugar.
Bake for 45 minutes until the edges are golden, the center is set and the fruit is bubbly
This blueberry cobbler pairs well with a serving of vanilla ice cream and tastes amazing after dinner.
